Sun-Dried Zucchini in Oil | 8.11 oz

In sunflower seed oil and extra virgin olive oil.

Ingredients: Sun-dried zucchini (65%), extra virgin olive oil (30%), capers, unrefined sea salt, hot pepper, apple cider vinegar, mint, aromatic herbs, garlic, lemon juice.

We cultivate the courgettes in open field in April, and we collect them manually in June and July. We wash them, select them, cut them into slices with the skin, salt them and let them dry in the sun on the looms of our farm for 3-4 days. Then the zucchini are still selected, washed and flavored with Mediterranean spices. In the end they are put in extra-virgin olive oil. To get 500 gr of dried zucchini, it will take about 10 kg of fresh, and over 120 hours of processing!

It is with this methodology slow and respectful of the natural times of maturation and drying that vegetables preserve all their nutritive richness. As our grandfather taught us.

Excellent as an appetizer or side dish, but also to dress salads of rice or cold pasta, or to season pizza: they are crisp and with a delicious taste of sun!
