In sunflower seed oil and extra virgin olive oil.

Ingredients: Eggplants fillets (60%), extra virgin olive oil (30%), capers, unrefined sea salt, hot pepper, apple cider vinegar, fresh mint, garlic, herbs, lemon juice.

They are cultivated in open field in the month of May in our farm, and collected manually in the month of August and September. They are washed, selected, peeled and cut into thin fillets. They are then left to mature in salt. "Allu carcu", is said in the dialect of Salento. It is an ancient technique that we still preserve in our processing. The aubergines in bed are then seasoned with Mediterranean spices and potted in extra-virgin olive oil. Fresh mint gives the finishing touch to this typical recipe from southern Italy. The unmistakable taste and taste of freshly picked aubergines on your tables all year round.

They have a strong and appetizing taste. These aubergines are excellent as an appetizer, to season sandwiches and sandwiches, but also to flavor the typical durum wheat frize.
