Ingredients: “Cellina” olives (67%), water (30%), unrefined sea salt, lemon-juice.

They are black olives typical of our area. They are harvested in November when the veraison is complete. The farmers give it to our farm where they are washed, divided by size, deamarized according to the ancient method of deamarization that provides for the stay in water and salt for 6 months. They are then selected again by hand one by one, and potted in water and natural salt.

Our farmers call them "the mature ones". They are tasty and are used to season wild chicory and meat. When they meet the bread they become "puccia". They are unsurpassable and must be tasted!
