Pecorino aged in barrels, made from raw ewe’s milk, ripened in lard and pepper. Cheese is laid on wooden boxes and left slowly aging while lard and pepper, covering its crust, allow it to maintain an intense white colour. It could be of a typical dark colour if wrapped in black pepper, or multi‐ coloured if covered with mixed pepper varieties.

Pecorino made from raw ewe’s milk, aged in caves. Recognized as Traditional Food Products of the Marche Region, Italy.

"Le Affinità Gustative", a small laboratory dedicated to aging and ripening of pecorino cheeses, is located in Mondavio, Pesaro‐Urbino province, Italy, in the heart of the historical renaissance downtown. The laboratory is composed by a cellar and an ancient underground tuff cave. Here, carefully selected cheeses are aged in limited production, using organic leaves, hay, flowers in order to evoke and develop ancient wisdom rooted in the territory. Compliance with such knowledge allows us to create traditional cheeses, protected by the Marche Region with particular exemptions.

With our products you could impress your clients by offering unique cheeses, where taste and character are not random qualities, but they are the result of combinations of tastes and smells blending and mixing in large oak barrels and earthenware jars.
